While the appearance of an egg cannot prove the hen’s complete health, several signs can help you identify fresh, good-quality eggs and understand what you are buying. 1. Check the Shell Start by examining the eggshell. A good-quality egg should have a clean, intact shell without cracks, leaks, mold, or unusual contamination. The shell may be white, brown, blue, green, or another natural color depending on the hen’s breed. Shell color does not determine the nutritional quality of the egg. A healthy, well-formed shell is generally a positive sign. Extremely thin, soft, or badly misshapen shells can sometimes occur when hens are stressed, very young, old, or experiencing nutritional problems.
